Food, a delicacy of all races and nationality. But is it safe to say nothing beats Zambian food? We like to think it is. Food is a major part of Zambian culture, traditional Zambian food has become an international cuisine in many parts of the world.  As a country of foodies, we are constantly experimenting with our taste buds by seeing how best we can transform and add on to old family recipes.

Our all-time favorite Zambian delicacy is Ifinkubala, Ifishimu, Catapilers, you can even call them Mopane Worms. Here is an Awanachi recipe you and your family can enjoy.

Ingredients:

3 cups dried caterpillars

200 ml cooking oil

2 medium sized tomatoes

1 medium sized onion

Salt to taste.

 

Method: 

  1. Wash caterpillars twice in cold water
  2. Remove from cold water and soak in warm water
  3. Allow the water to cool so that the caterpillars can be soft. Drain the water
  4. Heat the oil in a sauce pan and fry them for 20 minutes
  5. Add the grated tomatoes and onion. Cover and allow to cook for 10 minutes
  6. Stir and add salt and cover for another 10 minutes
  7. Remove from heat and allow to cool.

NB: You may fry the caterpillars to your desired texture, either dry soft or hard. Some people prefer preparing ifinkubala without tomatoes and onion. Serve with ubwali  (Nshima) or any side dish of your choice.
